A fusion of two of Oita’s famous products, these fish have been bred and are fed kabosu citrus fruit. Because of the antioxidant effects of the kabosu, Japanese amberjack is said to keep its freshness for longer periods of time. Additionally the fish are said to have a signature texture and smooth flavour. Meanwhile the kabosu fed to the halibut, removes the odour normally found in the guts of the fish, giving it a smoother flavour and making it popular as engawa sushi (fluke fin sushi).
